This is a super easy recipe for overnight cold oatmeal. Mix all the ingredients in a mason jar before you go to bed and your oatmeal is ready for you to grab and go in the morning. I season it with cinnamon and sometimes a teaspoon of honey or maple syrup, but you can add nuts or any other toppings you like. In this recipe, I use my fruit compote, but fresh fruit works just as well. This is a 21 Day Fix approved recipe. For the fruit compote, about 1/4 cup counts as a full purple serving because it is reduced in cooking. If using fresh fruit, use a full container (1 cup).
-1/2 red container (1/3 cup) Greek Yogurt
-1/4 purple container (1/4 cup) fruit compote, or 1 purple container (1 cup) fresh fruit
– 1 yellow container (1/2 cup) large flake rolled oats
-1/2 tsp cinnamon or other favourite toppings
Directions: Mix all ingredients in a mason jar. Refrigerate overnight and eat in the morning. If adding sweetener, add it in the morning before eating instead of when assembling before storing overnight.
Serving: This makes one serving of oatmeal. For those on the 21 Day Fix, the container portions are 1/2 Red, 1 Yellow, 1 Purple.
