This chicken can be made in a large batch on Sunday for use in meals throughout the week.
Makes 6 servings (1 serving = 1/2 chicken breast)
-3 bone-in, skin-on chicken breasts
-salt and pepper
Directions: Remove defrosted chicken from fridge 30 minutes before baking, Preheat oven to 450 degrees. Season chicken with salt and pepper, and desired seasonings, place on parchment paper lined baking sheet. Bake for 18-20 minutes, until cooked through. Remove from oven and let rest for 15 minutes, Remove chicken from skin and bone and store in sealed container in fridge until ready to eat. Keeps for about four days.
